With this recipe, my goal was to create delicious pancakes that would also be nourishing. After many many tries, I’m very happy with the result. These pancakes will give you the energy you need to start your day!
Servings: 16 pancakes
Ingredients
- 2 eggs
- ¼ cup sugar
- 1 cup milk
- 1 cup non-fat plain Greek yogurt
- 1 ¼ cup all-purpose flour
- ½ cup quick oats
- 2 teaspoons baking powder
- 1 cup fresh blueberries
- Butter or oil for cooking
Instructions
- In a large bowl, whisk together the eggs and sugar for about 3 minutes.
- Add the milk and yogurt and whisk until smooth.
- Add the rest of the ingredients and mix well.
- Heat a pan with a small amount of oil or butter on medium-low heat.
- Pour about ¼ cup of the pancake batter onto the hot pan. Cook for about 2-3 minutes or until bubbles appear on the surface. Flip the pancakes and cook on the other side for another 2-3 minutes.
- Repeat with the remaining batter.
Topping ideas:
- To get more proteins, I like to top my pancakes with Greek yogurt, fruits, and maple syrup. If you have a sweet tooth, Nutella and bananas are always a good idea with pancakes!
