I’ve got so many great ideas for Holiday recipes. Unfortunately, I kinda ran out of time to create all of them. You’ll have to wait until next year to see them all! Thankfully, I at least got one recipe for you, and it’s perfect for Christmas! So here’s my cookie dough bites recipe. The easiest recipe, with just a few ingredients. You just have to be patient while they’re refrigerating!
Servings: about 12 small cookie dough bites
Ingredients
- 2 tablespoons room temperature butter
- 2 tablespoons brown sugar, packed
- ¼ cup + 2 tablespoons oat flour
- ¼ cup creamy (or natural) peanut butter
- 2 tablespoon mini chocolate chips
- 1/3 cup semi-sweet chocolate chips
- 1 teaspoon canola oil (or coconut oil)
Instructions
- In a bowl, mix together the butter, the brown sugar, the flour, and the peanut butter.
- Add the mini chocolate chips and mix. Refrigerate for at least 2 hours.
- Line a plate or a baking sheet with parchment paper.
- Remove the cookie dough from the fridge. Using your hands, form small balls of dough and place them on the parchment paper.
- Place the balls in the freezer for about 20 minutes.
- In another bowl, place the semi-sweet chocolate chips and canola oil. Melt in the microwave.
- Dip one dough ball at a time in the chocolate, making sure they’re fully coated. Replace the balls on the parchment paper.
- Refrigerate the cookie dough ball until set. Enjoy!
Notes
- Optional: Once the cookie dough balls are dipped in the chocolate, you can top them with a drizzle of white or milk chocolate.

- You can store this dessert for about 5 to 7 days in the fridge.
