Parmesan Baked Tilapia

A tilapia recipe… Those who’ve known me for a while might be surprised by a fish recipe on my blog! For a long time, I didn’t like to eat fish at all. Over the years, I had to try it many different times before I learned to appreciate it. I think it just needs to be well-prepared! This recipe is delicious, easy, and really quick to make. Perfect for weekdays dinners

Cooking time: 15-20 minutes

Tilapia

Ingredients

  • 1 pound tilapia fillets (or other white fish)
  • 1 tablespoon butter, melted
  • ¼ cup Panko breadcrumbs
  • ½ cup shredded parmesan cheese
  • 1 teaspoon dry oregano
  • ½ teaspoon dry parsley (or ½ tbsp chopped fresh parsley)
  • ½ teaspoon minced garlic
  • 2 tablespoons sour cream

Instructions

  1. Preheat the oven at 400F and line a baking sheet with aluminum foil.
  2. In a small bowl, mix together the butter, breadcrumbs, parmesan, oregano, parsley, and garlic. Set aside.
  3. Place the tilapia fillets on the prepared baking sheet.
  4. Evenly spread sour cream onto the top of tilapia.
  5. Top with the breadcrumbs mixtures and gently press with your fingers.
  6. Cook in the oven for about 15-20 minutes or until fish is cooked (cooking time will depend on the thickness of the fish).
  7. Turn up the oven to 500F (broil) and keep cooking for another 2-3 minutes or until the top is golden and crispy.
