Mocha Granola

I love coffee. And chocolate! I decided to mix these two flavors to make delicious and crispy granola. The taste of coffee is perfectly balanced with chocolate. This is the perfect topping to add on yogurt – ideal for breakfast or a snack! Be aware, while cooking, it is going to smell SO good in your home!

Servings: Approximately 4 cups

Ingredients

  • 1/2 cup warm water
  • 2 tablespoons instant coffee
  • 1/3 cup maple syrup
  • 2 tablespoons vegetable oil (I used canola oil)
  • 1/3 cup cocoa
  • 2 tablespoons brown sugar
  • 3 cups old-fashioned oats
  • 1 cup chopped pecans
  • 2 tablespoons chia seeds
  • 1/3 cup dark chocolate chips (optional)

Instructions

  1. Preheat the oven to 325F and line a baking sheet with parchment paper.
  2. In a large bowl, pour the water and add the instant coffee.
  3. Add the maple syrup, oil, cocoa, and brown sugar. Whisk until well combined.
  4. Add the oats, pecans, and chia seeds. Mix well.
  5. Spread the granola on the prepared baking sheet.
  6. Bake for approximately 35 to 40 minutes, stirring every 10 minutes.
  7. Let the granola cool. Then, if desired, add the chocolate chips and mix.
  8. Store in an airtight container at room temperature.

Note:

  • If you want to make half the recipe, reduce the cooking time to 30-35 minutes.
