I love coffee. And chocolate! I decided to mix these two flavors to make delicious and crispy granola. The taste of coffee is perfectly balanced with chocolate. This is the perfect topping to add on yogurt – ideal for breakfast or a snack! Be aware, while cooking, it is going to smell SO good in your home!
Servings: Approximately 4 cups
Ingredients
- 1/2 cup warm water
- 2 tablespoons instant coffee
- 1/3 cup maple syrup
- 2 tablespoons vegetable oil (I used canola oil)
- 1/3 cup cocoa
- 2 tablespoons brown sugar
- 3 cups old-fashioned oats
- 1 cup chopped pecans
- 2 tablespoons chia seeds
- 1/3 cup dark chocolate chips (optional)
Instructions
- Preheat the oven to 325F and line a baking sheet with parchment paper.
- In a large bowl, pour the water and add the instant coffee.
- Add the maple syrup, oil, cocoa, and brown sugar. Whisk until well combined.
- Add the oats, pecans, and chia seeds. Mix well.
- Spread the granola on the prepared baking sheet.
- Bake for approximately 35 to 40 minutes, stirring every 10 minutes.
- Let the granola cool. Then, if desired, add the chocolate chips and mix.
- Store in an airtight container at room temperature.
Note:
- If you want to make half the recipe, reduce the cooking time to 30-35 minutes.
