If there is one recipe that everyone loves, it is definitely banana muffins, right? I love these muffins because they are soft, fluffy, and comforting. Also, they are super easy to make! Fun fact: this is actually the first recipe I ever created! I just didn’t publish it right away. 🙂
Servings: 12 muffins
Dry Ingredients
- 2/3 cup whole wheat flour
- 2/3 cup all-purpose flour
- 1/2 cup quick oats
- 1 tablespoon baking powder
- 1 pinch of salt
- 1/3 cup semi-sweet chocolate chips
- 3 tablespoons chopped pecans (optional)
Ingrédients humides
- 2 bananas, mashed
- 1/2 cup canola oil (or any vegetable oil)
- 1/2 cup honey
- 1 egg
Instructions
- Preheat the oven to 375F and grease 12 cups of a muffin tin or line it with paper liners.
- In a medium bowl, mix together all of the dry ingredients. Set aside.
- In a separate large bowl, combine all of the wet ingredients. Whisk until smooth.
- Pour the dry ingredients into the wet ingredients and mix until just combined.
- Fill your muffin tins with the batter.
- Bake for about 22 minutes or until a toothpick inserted in the middle comes out clean.
Note: I like to make that recipe with pecans because it adds some texture. However, if you want to make it nut-free, you can totally omit them!
