Vegetarian Mexican Bowl

That recipe has become a classic in my home! My boyfriend and I love eating tasty bowls. Bowls are so convenient: you can personalize them with the ingredients you have on hand. They are also a great idea for a dinner party – you can simply put everything on the table, and guests can make their own bowl! One important thing is to have a delicious sauce that will bind everything together. And I promise, this sauce is one of a kind.

Cooking: 15 minutes

Ingredients

  • 1 cup uncooked brown rice (or about 4 cups cooked rice)

For the tofu

  • 1 pound (454 g) extra-firm tofu, crumbled into small pieces or grated
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • 1 garlic clove, crushed (or ½ teaspoon minced garlic)

For the salsa

  • ¾ cup frozen corn, thawed (or canned)
  • 1 cup canned black beans, rinsed
  • 1 red bell pepper, diced
  • 1 green onion, chopped
  • 1 teaspoon olive oil
  • 2 teaspoons lime juice
  • 2 teaspoons fresh cilantro, chopped
  • ½ cup fresh mango (optional, but recommended)

For the sauce

  • ½ cup of plain Greek yogurt
  • 1 teaspoon paprika
  • ½ teaspoon onion powder
  • ¼ teaspoon smoked paprika
  • 1 garlic clove (or ½ teaspoon minced garlic)
  • ¼ teaspoon Sriracha
  • 1 tablespoon lime juice
  • 2 teaspoons maple syrup

Toppings :

  • Sharp cheddar cheese, shredded
  • Avocado, sliced or diced
  • Fresh cilantro, chopped

Instructions

  1. Cook the rice according to instructions on the package. While the rice is cooking, prepare the tofu, salsa, and sauce.

For the tofu

  1. Preheat the oven to Broil (500F).
  2. In a large ovenproof pan, heat a drizzle of olive oil over medium heat.
  3. Add all of the ingredients for the tofu. Mix well. Cook for 5 to 10 minutes, stirring occasionally.*
  4. Spread the mixture into an even layer. Place into the oven and broil for about 5 minutes or until it’s darkened.

*While the tofu is cooking, prepare the salsa and the sauce.

For the salsa

  1. In a medium bowl, combine all of the ingredients for the salsa. Set aside.

For the sauce

  1. In a small bowl, whisk together all the ingredients for the sauce.
  2. Season with salt and pepper to taste. Set aside.

To serve

  1. To serve, place the cooked rice in individual bowls and top with the tofu, salsa, shredded cheese, avocado, and sauce. If desired, add some fresh chopped cilantro.

Tips

  • In a hurry? You could replace the sauce with sour cream mixed with a few drops of sriracha.
  • If you’re not a tofu fan, you can substitute it with ground beef. In that case, you won’t have to grill it in the oven.
