I’m not entirely sure why, but that smoothie is incredibly refreshing. The combination of flavors might seem unconventional, but it’s definitely worth a try, even during winter! Drinking this smoothie is a fantastic way to incorporate some vegetables and fruits into your routine. It’s also a unique way to include tofu in your daily habits. Moreover, the vibrant purple color of the smoothie is simply beautiful.

Ingredients
- ½ cup diced cucumbers
- ½ cup unsweetened plain soy milk (or any milk of choice)
- 1 cup frozen blueberries
- ½ cup silk tofu
- 1 ½ tablespoon honey or maple syrup
Instructions
- Add all the ingredients in a blender.
- Blend until smooth.
- If desired, serve the smoothie in a bowl and top with fresh blueberries, sliced almonds, and granola.
