Arugula, Pear & Goat Cheese Salad

The mix of goat cheese and pear? Always a good idea. Mixed with a lemony dressing? Even better! This salad is fresh and perfect for summer!

Servings: about 6 servings

Ingredients

For the dressing

  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon honey
  • ¼ teaspoon dry oregano
  • Salt and pepper, to taste

For the salad

  • 5 oz (142g) arugula (about 8-9 cups)
  • ¼ cup goat cheese, crumbled
  • ¼ cup sliced almonds
  • 1 pear, diced or sliced

Instructions

  1. In a small bowl, whisk together all of theingredients for the dressing.
  2. Place the arugula in a large bowl. Add the dressing and mix.
  3. Top with the rest of the ingredients and serve.

Tips

  • I personally don’t use all of the dressing, so I highly recommend not adding it all at once – Add some of it, taste it and add more if needed, according to your preference!
  • The dressing can be store in the fridge for about one day. If you’re not planning on eating all the salad within 24 hours, I recommend making half the dressing. Then you can make more dressing a couple of days later.
