Ingredients
- ¾ cup creamy peanut butter
- ½ cup maple syrup
- 1 ¾ cups quick oats
- 1 cup puffed rice (like Rice Krispies)
- ¼ cup unsweetened shredded coconut
- 2/3 cup semi-sweet chocolate chips
- 2 teaspoons vegetable oil
Instructions
- Grease a muffin tin with vegetable oil or cooking spray.
- In a large bowl, mix together the peanut butter and maple syrup.
- Microwave for about 30 to 40 seconds and stir until the peanut butter is melted.
- Add the oats, puffed rice, and shredded coconut, and mix well.
- Spread the mixture into the muffin tin cavities and press down firmly with your fingers.
- In a small bowl, microwave the chocolate chips and vegetable oil in 30-second intervals until melted, stirring in between.
- Spread the melted chocolate over the bars.
- Refrigerate for at least 30 minutes before enjoying.
