Chicken Parmesan (no breading)

As good as chicken parmesan, but easier to make!! I love chicken parmesan – but I don’t always feel like doing the original recipe with breaded chicken. That’s why I came up with the idea of a quicker version (ready in less than 30 minutes). I made this recipe for the first time a couple of years ago, when I was still in school. I didn’t have a recipe, I just tried something, and it turned out really good! I’ve finally decided to standardize it to make it an actual recipe, so here it is! I’m sure your whole family is gonna love this chicken!

Servings: 4 to 6

Cooking time: 20 minutes

Ingredients

  • 3 chicken breasts, sliced lengthwise
  • Olive oil
  • ½ cup tomato sauce
  • 1 cup shredded mozzarella cheese
  • ¼ cup shredded parmesan cheese

Instructions

  1. Preheat the oven to broil (500F).
  2. Line a baking sheet with aluminum foil.
  3. Place the chicken breast on the prepared baking sheet and drizzle with olive oil.
  4. Cook in the oven for about 15 minutes.
  5. In the meanwhile, in a bowl, mix together the mozzarella and parmesan cheese.
  6. Coat the chicken with tomato sauce.
  7. Top with the mozzarella and parmesan cheese.
  8. Return to the oven and cook for another 5 minutes or until the cheese is melted and golden.

Note :

  • If I use plain tomato sauce, I like to add 1 tsp of Italian seasoning to add a little something to this chicken parmesan!
