Overnight Oats – Peanut Butter and Strawberries

Are you a fan of the PB&J mix? These are the flavors I wanted to recreate in this oatmeal. What I like about overnight oats is that breakfast is ready when you wake up. You prepare it the night before and let sit in the fridge for the night. Makes the morning rush a little easier!

Servings: 1

Ingredients

  • 2/3 cup strawberries
  • 3 tablespoons peanut butter powder* (or 2 tbsp natural peanut butter or melted creamy peanut butter)
  • 1/3 cup quick oats
  • ¼ cup plain Greek yogurt
  • ½ cup milk
  • 1 tablespoon chia seeds
  • 1 tablespoon maple syrup

Instructions

  1. On a small plate, coarsely crush the strawberries with a fork.
  2. In a glass jar or a small airtight container, mix all of the ingredients except the strawberries.
  3. Add the crushed strawberries and mix slightly to combine.
  4. Cover the jar or container and place it in the fridge overnight (or for at least 4 hours).
  5. When you’re ready to eat, you can top it with a drizzle of melted peanut butter, fresh strawberries, or chopped peanuts. Enjoy!

Note: Note: For this recipe, peanut butter powder is recommended because it blends well with the other ingredients. However, you can also use regular peanut butter if you prefer. The taste will still be delicious!
